Olive oil's benefits left on the shelf

HOSTS trying to impress dinner party guests by leaving a bottle of olive oil out on display could be inadvertently damaging the oil’s health-giving properties.

Light destroys many of the disease-fighting antioxidants found in olive oil, say researchers at the University of Bari, in Southern Italy. This means manufacturers should pay more attention to choosing suitable storage containers.

Oils are known to lose their antioxidants over time because of reactions spurred by light and oxygen, but this is the first time their destruction has been recorded over a 12-month period.
