Letter: Jam on it

I think that the strange flavouring of the jam in Jammie Wagon Wheels is to
solve a technical viscosity problem
(Feedback, 27 May).

Raspberry jam does not have much pectin and is a difficult “set”. Plum jam is
rich in pectin and sets well, but raspberry is a more acceptable flavour. Hence
the combination.
